Ruby red with violet hues.

Scent:
Harmonious and complex. Intense and fruity with hints of small black fruits such as blueberry and spices, among which black pepper is evident. Varietal typicality of Syrah. Light notes of roasting and menthol nuances.

Longevity:
The SassiCayas 2020 will reach its full potential from spring 2024 and will retain these characteristics until 2034 and beyond if stored in optimal conditions. Best if uncorked one hour before consumption.

Taste:
Fresh and strong attachment. It has a good structure and is well balanced with ripe and sweet tannins of excellent quantity and quality. A good sapidity accompanies the very long and persistent finish.

Separate vinification of the two wines:   SASSI GROSSI 2020 Origin: Sopraceneri (Bassa Leventina and Riviera) Vinification: maceration for 2 weeks at 28°C, placed in pièce bourguignonne (228 litres) after malolactic fermentation, matured for 18 months with a single racking.   CAYAS 2020 Origin: Central Valais (Balavaud, Vétroz, Chamoson and Fully) Winemaking: pre-fermentation maceration at 8°C for 10 days, followed by fermentation with punching-down for 20 days. Malolactic fermentation in Burgundy barrels and ageing for 24 months without racking.   A careful selection of the best barrels for both wines resulted in this special edition. A very important wine produced with grapes from the two cantons south of the Alps. The two wines were blended on 12 April 2023 in Mendrisio and bottled on 6 June 2023.
