The perfectly ripened fruit has been harvested in small bins and “air-concentrated” in a well-ventilated room. Mid of October the grapes have been crushed and placed in temperature controlled stainless steel tanks, where the alcoholic fermentation took place. Afterwards, for the malolactic fermentation, the “36” was given 36 months in new French oak barriques (Allier and Tronçais). Frequent racking from the lees allowed for bottling without fining, filtration or other physical stabilization. This may result in slight sediment in the bottle.
