The Pinot Noir undergoes crushing and destemming before the must is extracted in a very gentle pressing. Juice from the three varietals is vinified separately. Blending takes place only after the wines have fermented and matured for seven months in barrels of new (51 %) and one-year old (42 %) French oak. Furthermore, part of the Chardonnay and Sauvignon Blanc (7%) are refined in stoneware containers, a material similar to natural granite.
